Pasta with Spinach Cheese Sauce (Pasta mit Spinat-Käse-Sauce)


For the Pasta:

  • 250 g pasta (spaghetti or penne)

  • Salt (for boiling pasta)

  • 1 tablespoon olive oil

For the Spinach Cheese Sauce:

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach)

  • 1 cup heavy cream

  • 1 cup milk

  • 1 cup grated cheese (such as Parmesan, mozzarella, or a blend)

  • Salt and black pepper to taste

  • 1/4 cup grated Parmesan cheese (for topping, optional)


For the pasta:

  • Boil water in a large vessel and add salt to it.

  • Add the pasta to boiling water and continue to cook.

  • Once cooked as per instructions drain the pasta and toss with a little olive oil to prevent sticking. Set aside.

Prepare the Spinach Cheese Sauce:

  • In a pan, heat the butter and olive oil over medium heat.

  • Add the minced garlic and chopped onion, and sauté until the onion becomes translucent.

  • Add the chopped spinach to the pan and cook. The cooked spinach can be blended to make a paste (optional).

  • Cook the spinach on low flame, and add the heavy cream and milk to the pan, stirring to combine.

  • Add the grated cheese, stirring constantly until the cheese is melted and the sauce is smooth.

  • Season with salt, and black pepper to taste.

Combine Pasta and Sauce:

  • Add the cooked pasta to the pan with the spinach cheese sauce.

  • Toss well to ensure the pasta is fully coated with the sauce.

  • Cook for an additional 2-3 minutes to allow the flavors to meld together.

  • Top with extra grated Parmesan cheese, if desired.
